Ingredients
500g Tapioca, grated
3/4 cup sugar (I reduced to 1/2 cup)
1/2 cup think coconut milk
1/3 cup butter, melted (I replaced with canola oil)
1 egg, beaten
1/2 tsp vanilla essence
Method
Mix all the ingredients together and pour into a loaf pan. Bake at 170C for 40-45min till cooked.
