Basmati Fried Rice



Ingredients

Cooked Basmati Rice, 2 servings
1/2 cup corn (or more)
1 small red capscicum, diced
1/2 cup sliced button mushroom (or more)
2 stalks spring onion, chopped into 1 inch length
2 eggs, lightly beated
salt and pepper to taste
oil for frying



Method

  1. Heat oil in pan. Fry capscicum, mushroom and corn. Put aside. 
  2. Fry eggs in pan, add cooked rice and fry continuously. Add in capscicum, mushroom and corn from (1).
  3. Season with salt and pepper to taste.
  4. Garnish with chopped spring onion (I put mine into rice to cook before turning off the fire)
