Ingredients
Cooked Basmati Rice, 2 servings
1/2 cup corn (or more)
1 small red capscicum, diced
1/2 cup sliced button mushroom (or more)
2 stalks spring onion, chopped into 1 inch length
2 eggs, lightly beated
salt and pepper to taste
oil for frying
Method
- Heat oil in pan. Fry capscicum, mushroom and corn. Put aside.
- Fry eggs in pan, add cooked rice and fry continuously. Add in capscicum, mushroom and corn from (1).
- Season with salt and pepper to taste.
- Garnish with chopped spring onion (I put mine into rice to cook before turning off the fire)
