Cranberry Cornflakes Cookies




















Ingredients

250g Butter (I used 227g as the butter I bought came in this size and I was lazy to add on =p)
175g Icing sugar (I reduced to 130g)
1 Egg
1tsp Vanilla powder (I used vanilla extract)
350g Plain flour
1 tsp Baking powder
160g Cornflakes (crushed)
50g cranberry

Method
  1. Combine plain flour, baking powder and vanilla extract together with the crushed cornflakes, set aside.
  2. Cream butter, egg and icing sugar together till light and fluffy.
  3. Pour in all the plain flour mixture to the butter mixture and mix well. Fold in the cranberry.
  4. Use spoon to scoop the mixture on to the baking tray.
  5. Bake at 180C for about 15 mins.
