Ingredients
227g butter
250g sugar
3 large eggs
1 1/2 tsp vanilla extract
190g sour cream (1 tub - I used low fat)
380g cake/ plain flour
2 1/4 tsp baking powder
1/4 tsp baking soda
3tbsp cocoa powder
3tbsp hot water
Method
- Dissolve cocoa powder in hot water. Set aside.
- Cream butter and sugar till light and fluffy. Add in eggs, one at a time, mixing well after each addition. Add in vanilla and sour cream and mix well.
- Fold in flour, baking powder and baking soda till well combined.
- Combine cocoa liquid with 1/3 of cake batter.
- Pour batter into prepared tin, alternating between plain and cocoa batter to create marble effect.
- Bake at 180C for 45-50min till skewer inserted into the centre comes out clean.
